Cheesecake is one of my favorites, I love the taste so much! Personally, I prefer cheesecake made with quark much more than with cream cheese.
So here you will find the recipe of my favorite cheesecake made with quark!

Ingredients
For the dough: (springform pan, 26 cm diameter)
- 200 g flour
- 75 g sugar
- 75 g butter
- 1 egg
- ½ package baking powder (8 g)
- A pinch of salt
For the filling:
- 125 g soft butter
- 200 g sugar
- 1 package of vanilla sugar
- 1 package of vanilla pudding powder
- 3 eggs
- 500 g low-fat quark
- 200 g sour cream
- 200 g sweet cream
Instructions
- Preheat oven to 180 C.
For the dough, mix all the ingredients until they form a dough. - Press the dough into a springform pan (diameter 26 cm), also at the edges (about 2-3 cm high).
- Whip the cream until stiff and set aside.
For the filling, beat butter, sugar, vanilla sugar and eggs until creamy. Add pudding powder and mix briefly. One by one, add low-fat quark and sour cream and mix. Finally, gently fold the cream into the dough. - Now fill the filling into the springform pan.
Bake for 1 hour, then turn off the oven, open the oven door slightly and let the cake cool. This will prevent the cheesecake from collapsing as much. - Remove cake from oven and refrigerate for a few hours.
