Banana bread is perfect for every occasion or whenever you have leftover ripe bananas at home! It’ super easy to make and a perfect breakfast, afternoon snack, dessert or to share with friends.
Note: You can easily swap out the eggs for flax eggs to make it vegan! 🌱



Ingredients
- 75 g melted coconut oil/ good neutral oil or extra-virgin olive oil
- 100 g sugar of your choice
- 2 eggs
- 225 g mashed ripe bananas (about 3 bananas)
- 50 ml milk of your choice
- 1 tsp baking soda
- 1 tsp. vanilla extract
- ½ tsp salt
- ½ tsp cinnamon
- 220 g flour (or 200 g flour and 50 g ground nuts)
- To taste: Add nuts, chocolate chips, fruits
Instructions
- Preheat oven to 170 C.
- In a bowl, mix oil, sugar. Add eggs and beat until creamy. Then add the mashed banana and milk.
- Stir in baking soda, vanilla extract, salt and cinnamon. Finally, stir in the flour.
- If desired, add chopped chocolate/nuts/fruit to the batter.
- Pour everything into a loaf pan and sprinkle with cinnamon/other toppings.
- Bake for approx. 50-60 min.
- Let cool and enjoy!
