My all time favorite banana bread

Banana bread is perfect for every occasion or whenever you have leftover ripe bananas at home! It’ super easy to make and a perfect breakfast, afternoon snack, dessert or to share with friends.

Note: You can easily swap out the eggs for flax eggs to make it vegan! 🌱

Ingredients

  • 75 g melted coconut oil/ good neutral oil or extra-virgin olive oil
  • 100 g sugar of your choice
  • 2 eggs
  • 225 g mashed ripe bananas (about 3 bananas)
  • 50 ml milk of your choice
  • 1 tsp baking soda
  • 1 tsp. vanilla extract
  • ½ tsp salt
  • ½ tsp cinnamon
  • 220 g flour (or 200 g flour and 50 g ground nuts)
  • To taste: Add nuts, chocolate chips, fruits

Instructions

  1. Preheat oven to 170 C.
  2. In a bowl, mix oil, sugar. Add eggs and beat until creamy. Then add the mashed banana and milk.
  3. Stir in baking soda, vanilla extract, salt and cinnamon. Finally, stir in the flour.
  4. If desired, add chopped chocolate/nuts/fruit to the batter.
  5. Pour everything into a loaf pan and sprinkle with cinnamon/other toppings.
  6. Bake for approx. 50-60 min.
  7. Let cool and enjoy!
