Raspberry Tiramisu

With summer around the corner, it’s time to enjoy lighter and refreshing desserts. And when it comes to speed and simplicity, my raspberry tiramisu is an unbeatable choice. I love making this delicious dessert when the temperatures rise because it requires no baking time and is ready in no time. Let me show how you can make this delicious combination of fruity raspberries and creamy tiramisu flavor at home!

Ingredients

  • 500 ml coffee
  • 2 tbsp sugar
  • 4 egg yolks
  • 60 g sugar
  • a pinch of salt
  • 750 g mascarpone
  • 100 g whipped cream
  • 1 package of vanilla sugar / 1 tsp vanilla extract
  • 400 g frozen raspberries
  • 300 g lady fingers
  • some cocoa powder for sprinkling

Instructions

  1. Mix the hot coffee with 2 tablespoons of sugar.
  2. Whip the cream with vanilla sugar/vanilla extract until stiff.
  3. Beat the egg yolks with sugar and salt for several minutes until creamy.
  4. Fold the mascarpone into the egg yolk cream. Then carefully fold in the whipped cream.
  5. Dip the ladyfingers in the coffee for a couple of seconds and place them next to each other in a mold. Spread the mascarpone cream on top. Add raspberries on top. Then place another layer of dipped ladyfingers on top, followed by cream and raspberries.
  6. Put the tiramisu in the refrigerator for at least 2 hours.
  7. Before serving, dust with cocoa powder and enjoy!

This makes quite a big portion but of course you can halve/third/quarter the recipe! 🤎
