My homemade granola

Granola is hands down my favorite go-to breakfast, and though I don’t make it as often as I’d like, it’s always so fun and surprisingly easy when I do. you can customize it just the way you like it! If you’ve never tried making your own granola, I highly recommend giving it a shot — it’s quick, simple, and tastes way better than store-bought. 🍯 🥥 🌰

Ingredients

  • 500 g rolled oats
  • 150 g mixed nuts (like almonds, walnuts, or hazelnuts), roughly chopped
  • 75 g shredded coconut or coconut chips (optional)
  • 4 tbsp chia or flax seeds (optional, for extra crunch and nutrients)
  • 150 g dried goji berries (add after baking)
  • 130 ml honey (or maple syrup for a vegan option)
  • 80 ml melted coconut oil (or any neutral oil)
  • 1 ½ tsp vanilla extract
  • 1 ½ tsp cinnamon (optional for a warm flavor)
  • pinch of salt

Instructions

  1. Preheat your oven to 160°C and line a baking sheet with parchment paper.
  2. In a large bowl, mix the oats, nuts, coconut, chia/flax seeds, and salt.
  3. Add the honey, oil as well as vanilla and cinnamon. Stir well until everything is evenly coated.
  4. Spread the mixture on the baking sheet and press down to form clusters.
  5. Bake for 25-30 minutes, stirring halfway through. Be careful not to overmix if you want those big granola clusters!
  6. Let the granola cool completely on the sheet — it will crisp up as it cools. Once cool, break it into pieces and stir in the goji berries.
  7. Store in an airtight container, and enjoy with yogurt, milk, or just as a snack! Enjoy! 🥣 🥛 🫐
