Granola is hands down my favorite go-to breakfast, and though I don’t make it as often as I’d like, it’s always so fun and surprisingly easy when I do. you can customize it just the way you like it! If you’ve never tried making your own granola, I highly recommend giving it a shot — it’s quick, simple, and tastes way better than store-bought. 🍯 🥥 🌰

Ingredients
- 500 g rolled oats
- 150 g mixed nuts (like almonds, walnuts, or hazelnuts), roughly chopped
- 75 g shredded coconut or coconut chips (optional)
- 4 tbsp chia or flax seeds (optional, for extra crunch and nutrients)
- 150 g dried goji berries (add after baking)
- 130 ml honey (or maple syrup for a vegan option)
- 80 ml melted coconut oil (or any neutral oil)
- 1 ½ tsp vanilla extract
- 1 ½ tsp cinnamon (optional for a warm flavor)
- pinch of salt
Instructions
- Preheat your oven to 160°C and line a baking sheet with parchment paper.
- In a large bowl, mix the oats, nuts, coconut, chia/flax seeds, and salt.
- Add the honey, oil as well as vanilla and cinnamon. Stir well until everything is evenly coated.
- Spread the mixture on the baking sheet and press down to form clusters.
- Bake for 25-30 minutes, stirring halfway through. Be careful not to overmix if you want those big granola clusters!
- Let the granola cool completely on the sheet — it will crisp up as it cools. Once cool, break it into pieces and stir in the goji berries.
- Store in an airtight container, and enjoy with yogurt, milk, or just as a snack! Enjoy! 🥣 🥛 🫐
