Ingredients
- 150 g flour
- 80 g ground nuts (almonds, walnuts, etc.)
- 50 g brown sugar
- 30 g white sugar
- 2–3 tsp matcha powder
- 100 g softened butter
- 1 egg (room temperature)
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- a pinch of salt
- 1–2 tbsp milk (if needed)
- 100-150 g white chocolate chips
Instructions
- Beat softened butter with brown and white sugar until light and fluffy.
- Mix in the egg and vanilla extract.
- In another bowl, mix flour, ground almonds, matcha powder, baking powder, and salt.
- Gradually add dry ingredients to the wet mixture. Add 1–2 tbsp milk if the dough feels too dry. Stir in white chocolate chips.
- Wrap the dough and chill for at least 30 minutes (1 hour is better).
- Preheat the oven to 170°C (340°F).
- Roll dough into small balls, place on a lined baking sheet, leaving space between them.
- Bake for 10–12 minutes. The edges should be firm, but the center soft.
- Let cookies rest on the tray for a few minutes, then transfer to a rack to cool completely.
